Chick Pea Humus
Ingredients;
2 cans of Metelliana Chick Peas.
One Clove of Garlic.
3 tbps of Extra Virgin Olive Oil.
Salt & Pepper.
Half the juice of fresh lemon.
Garnish
Orange zest.
Method
1/ Place Chick Peas in a food processor add Olive, Oil Garlic mix until smoothish.
2/ Add Salt & Pepper and lemon juice to taste.
3/ Remove from the processor and garnish with lemon zest to serve.
Lentil Rice
Ingredients
90g/3oz Hider Dark Speckled Lentils
250g/9oz Hider Patna Rice
2tbsp vegetable oil
1 onion, sliced
2 garlic cloves, crushed
3 curry leaves, (optional)
1 Lemongrass stalk (or try lemon rind )
1 Green chilli deseeded and chopped ( Jalapeno chilli )
1 pinch of Cumin seed
2 Pinches of Sea Salt
90g/30oz of creamed coconut (not tinnned coconut milk)
2 cups of hot water to 1 cup of rice
Fresh coriander to garnish
1. Wash the lentils and place in a saucepan. Cover with cold water, bring to the boil and boil on high heat for 10 minutes.
2. Wash Patna rice to remove starch (this will stop the rice from sticking when cooked).
3. Heat oil in a large saucepan with lid. Add sliced onion and fry of until soft, add the garlic,curry leaves, lemon grass(or finely chopped lemon rind),chilli, cumin seeds and salt, then stir.
4. Remove lentils from heat and drain, mix the onion and spice then mix with the rice and mix it all well.
5. Add the creamed coconut to the hot water dissolve then add to the rice mixture. Return to the boil.
6. Once all liquid has been absorbed by the rice mixture removed from heat and put saucepan lid on saucepan and leave for 10 to 15 minutes.( This will help the rice to cook in its own steam).
7. Remove to a serving bowl and garnish with coriander.
This will serve 2 people on a main course, or 4 people for a starter.
Tomato Herb & Wheat Salad Recipe
This is also a salad "on-the-go" because it fills into halved pita bread very nicely.
4 plum tomatoes, seeded & diced.
2 green onions, chopped
1 medium cucumber, peeled & chopped
1oz Chopped Mint
10z Chopped Parsley
3 tbsp of Olive Oil
3 tbsp of Lemon Juice
1 Cup of Hider Bulgur Wheat
1 1/2 cups boiling water
1/2 teaspoon fresh black pepper, ground
1. Place Bulgar Wheat in a bowl and cover with the boling water for 30 minutes
2. Line a sieve with a piece of absorbent kitchen paper and drain Bulgar Wheat.
3. Place Bulgar Wheat in a bowl, add tomatoes, onion's and herbs mix well.
4. Add Olive Oil and Lemon Juice stir and serve either on its on or with pitta bread.
